Our Story
Omega Muffins were conceived several years ago when owner, Kathy Lemmon, became aware of the benefits of omega oils and B vitamins. She started using ground flax and walnuts - both excellent sources of the nutrients - in her oatmeal in the morning and liked the combination, but got tired of fixing it every day. So she started thinking that what she would really like was something portable that could be made ahead and frozen - aha! like a muffin!! But traditional muffins are high in fat and sugar and she didn't want that.

So she started experimenting with some family recipes and soon came up with a yummy and nutritious muffin made with flax seeds, oats and dates.

In addition to being moist and delicious, the muffin is low in fat and sugar, high in fiber, good source of protein, and is low in calories. The health claims of flax are many - helps lower cholesterol, regulates digestion, reduces inflammation, stabilizes blood sugar, helps concentration, even helps reduce hot flashes! We feel our muffins are especially good for school children for all of the above benefits, but especially because they are filling and satisfying. They "stay with you," helping to curb mid-morning hunger and blood sugar fluctuations that can contribute to concentration problems. One muffin in the morning will keep you full till lunch-time or beyond.

Kathy started sending the muffins to school with her teenaged son for his lunch. He shared them with his friends and pretty soon they were asking him every day, "Where's the muffins?" She knew she had a success when teenage boys were asking for a healthy muffin. And Omega Muffins was born...
